Colorful and hearty Colorado Buffalo Chili is a twist on classic chili recipes. It is a thick stew-like dish made with ground buffalo meat, which is leaner and more flavorful compared to beef. The spices in this recipe give the chili a robust and spicy flavor, and the canned tomatoes, beans, and chilies make it taste like it was cooked from scratch. Served with sour cream, shredded cheddar cheese, or diced avocado, this chili can be made in big batches and enjoyed for days. It is perfect for football game watching parties, potlucks, or family dinners.

Instructions

1.Heat a large pot over medium-high heat. Add the ground buffalo, cumin, and cayenne pepper, and brown the meat.
2.Drain any excess fat from the pot. Stir in the diced tomatoes with green chiles, tomato soup, kidney beans, chili beans, onion, garlic, Anaheim chile pepper, poblano chile pepper, chili powder, red pepper flakes, cumin, cayenne pepper, salt, and black pepper.
3.Bring the mixture to a boil, then reduce heat to a simmer and cook for about 1 hour, stirring occasionally. Add water if the chili becomes too thick.
