Ingredients

1 lb white cheese ( Queso Fresco from Costco works great )
1 1/2 cups cornstarch
2 eggs , beaten
2 tablespoons brown sugar
1/2 teaspoon salt
1 quart milk
1 1/2 cups cornstarch
3/4 lb brown sugar
4 -5 cinnamon sticks or 4 -5 ground cinnamon , to taste

Instructions

1.Grate 1 lb of white cheese into a bowl, add 1 1/2 cups of cornstarch, 2 beaten eggs, 2 tablespoons of brown sugar and 1/2 teaspoon of salt. Mix well.
2.Knead the mixture with your hands for about 10 minutes until it forms a sticky dough.
3.Divide the dough and shape them into small round balls.
4.Heat a generous amount of oil in a pot over medium heat, fry the bunuelos until golden brown.
5.In a separate pot, heat 1 quart of milk, brown sugar, and cinnamon sticks over medium heat until you get almost boiling.
6.In a separate container, mix 1 1/2 cups of cornstarch in cold water. Add it to the milk mixture and stir well until it thickens.
7.Serve the bunuelos with natilla on top and enjoy the feast.
