1 pound chicken livers , trimmed
1 cup milk
8 tablespoons cold unsalted butter , divided
1 small yellow onion , chopped
1 tablespoon whole black peppercorns , divided
2 cloves garlic , smashed
1 teaspoon red pepper flakes
1 tablespoon balsamic vinegar
1 teaspoon fresh thyme
2 bay leaves
salt and ground black pepper to taste
2 teaspoons Scotch whiskey

Instructions

1.In a bowl, combine the chicken livers and milk, making sure the livers are fully submerged. Let soak for 2 hours.
2.Drain the livers and pat dry with paper towels.
3.In a skillet, melt 4 tablespoons of the butter over medium heat. Add the onion, 1/2 tablespoon of the peppercorns, garlic, and red pepper flakes. Cook until the onion is soft and translucent, about 5 minutes.
4.Add the livers, balsamic vinegar, thyme, bay leaves, salt, and black pepper to the skillet. Cook, stirring occasionally, until the livers are cooked through but still pink in the center, about 10 minutes.
5.Remove the bay leaves and discard. Transfer the liver mixture to a food processor and pulse until somewhat smooth.
6.Add the remaining 4 tablespoons of butter and 1/2 tablespoon of peppercorns, along with the Scotch whiskey. Pulse until completely smooth.
7.Cover the pate and chill in the refrigerator for at least 1 hour before serving.
