Ingredients

1 lb veal roast ( or two small ones )
1 onion , roughly sliced
1 carrot , roughly sliced
1 stalk celery , roughly sliced
2 garlic cloves
1 cup white wine
4 cloves ( the spice )
5 bay laurel leaves
1 rosemary sprig
salt & pepper
olive oil
3 anchovies
6 ounces canned tuna in olive oil
1 cup of quality mayonnaise
2 tablespoons capers ( rinsed if salted , drained if in oil )
Cold Veal Roast - Vitello Tonnato is a popular Italian dish that is perfect for those hot summer days. It's a light and refreshing meal that is sure to satisfy. The cold veal roast is sliced thinly and paired with a creamy tonnato sauce. The veal is cooked in a pressure cooker, which reduces the cooking time and makes the meat tender and juicy. Instructions

1.Preheat your pressure cooker and add olive oil to the pot. Brown the veal roast on all sides.
2.Remove the browned veal from the pot and add in all the sliced vegetables. Cook until the vegetables have softened.
3.Add the white wine, cloves, bay laurel leaves, rosemary sprig, salt, and pepper to the pot.
4.Add the browned veal back to the pot and close the lid. Cook for 45 minutes under pressure.
5.Release the pressure and open the lid. Check the temperature of the meat, it should be 145°F at the center.
6.Once the meat has cooled down, slice it thinly and put it in the fridge for a couple of hours.
7.For the tonnato sauce, drain the tuna and add it to a blender with the mayonnaise, anchovies, and capers. Blend until smooth.
8.Assemble the dish by placing the sliced cold veal on a plate and pouring a generous amount of tonnato sauce on top.
