250 g tagliatelle pasta noodles , fresh ( or thin spaghetti , about 10 oz )
2 garlic cloves , minced
fresh basil , a few leaves , torn
1/4 cup olive oil , extra-virgin
1 tablespoon parsley , chopped
2 tablespoons olive oil , extra-virgin
1/4 cup white onion , chopped
1 garlic clove , minced
1 celery , finely chopped
4 large tomatoes , ripe , peeled , seeded , drained & chopped
4 fresh basil sprigs
4 fresh parsley sprigs
salt & freshly ground black pepper
1 pinch sugar

Instructions

1.Bring a large pot of salted water to a boil. Add the tagliatelle and cook until al dente, about 7 minutes.

3.In a large skillet, heat the 2 tablespoons of olive oil over medium heat.

5.Add the tomatoes, basil and parsley sprigs, salt, black pepper and sugar, and cook until the tomatoes break down, about 15 minutes.
6.Drain the pasta and rinse under cold water until cool, then drain again and toss with the puree.
7.Serve the tagliatelle with the tomato sauce on top, garnished with fresh basil leaves.
