Ingredients

4 small Japanese eggplants or 2 medium eggplants , about 6 inches long ( about 10 oz )
4 teaspoons peanut butter , chunky or smooth
4 teaspoons soy sauce
4 teaspoons rice vinegar
2 2 teaspoons dry sherry or 2 teaspoons mirin
1 tablespoon sesame oil
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon garlic and red chile paste ( or more , to taste )
1/2 teaspoon ginger , minced
4 tablespoons cilantro , chopped

Instructions

1.Preheat oven to 350 degrees F.
2.Cut the eggplants in half, lengthwise, and place them on a lightly oiled baking sheet, cut-side down
3.Bake the eggplants in the preheated oven until they are tender and slightly browned, for about 35-40 minutes
4.While the eggplants are baking, you can prepare the peanut sauce
5.In a small bowl, whisk together all the ingredients for the peanut sauce; peanut butter, soy sauce, rice vinegar, dry sherry, sesame oil, sugar, salt, garlic and red chile paste, and minced ginger
6.Once the eggplants are cooked, let them cool down and then spoon the peanut sauce over the eggplants
7.Garnish with some chopped cilantro and serve chilled
