2 1/4 lbs fresh calanda peaches
1 leek
1/2 onion
3 1/4 cups chicken stock ( or vegetable )
1/2 cup light cream
3 tablespoons oil
2 tablespoons butter
salt
pepper
nutmeg
cinnamon
3 whole cloves
2 peaches
5 ounces iberico ham ( Spanish )
of fresh mint
Cold Calanda Peach Soup - Sopa Fria De Melocotón De Calan is a traditional Spanish dish that originates from the Calanda region of Aragon, which is known for its high-quality peaches. This delicious peach soup is a refreshing and elegant dish that is perfect for hot summer days. The soup has a creamy texture and mild sweetness that pairs perfectly with the salty and savory flavor of Iberico ham. Instructions

1.Boil a pot of water and blanch the fresh peaches for 30 seconds.
2.Remove the peaches from the boiling water and plunge them into a bowl of ice water for 10 seconds. Peel and cut the peaches into small pieces.
3.Chop the onion and leek. Melt the butter and oil in a pot and lightly brown the onion and leek.
4.Add the chopped peaches, chicken stock, cloves and cinnamon. Simmer for 20 minutes, or until the peaches are tender.
5.Mix in the light cream and bring to a boil. Remove from heat and let the soup cool to room temperature. Then blend the soup in a blender until a creamy texture is achieved. Chill the soup in the refrigerator until ready to serve.
6.To serve, dice the Iberico ham into small cubes and add to the center of the soup. Slice the remaining fresh peaches and lay them around the ham cubes. Garnish with fresh mint leaves.
