Colcannon Soup is a traditional Irish dish that combines creamy mashed potatoes with shredded cabbage and leeks. It's a simple yet hearty meal that is often enjoyed during the colder months, especially around St. Patrick's Day. This recipe takes the classic colcannon flavors and turns them into a comforting and warming soup that is perfect for a cozy night in. Serve it with some crusty bread for a complete meal.

Instructions

1.Heat a large pot over medium heat. Add the bacon and cook, stirring occasionally, until crispy. Remove the bacon with a slotted spoon and set aside.
2.In the same pot, add the onions and leeks, and cook until softened, about 5 minutes.
3.Add the cabbage and garlic, and cook for an additional 2-3 minutes, until the cabbage is wilted.
4.Stir in the flour until well combined, then pour in the white wine. Allow the mixture to simmer for 2-3 minutes, stirring constantly.
5.Add the chicken stock and potatoes, and bring to a boil. Reduce the heat to low, and simmer for about 20 minutes, until the potatoes are tender.
6.Remove the pot from the heat, and use an immersion blender to puree the soup until it is smooth and creamy.
7.Stir in the heavy cream, and season with salt and pepper to taste. Serve hot, garnished with the crispy bacon.

It’s packed with flavor from the bacon and leeks, while the potatoes and cream give it a rich and creamy texture.

Colcannon Soup is also a great way to use up leftover cabbage from other recipes.

CONS

This soup is not suitable for vegetarians or vegans, as it contains bacon and chicken stock.
It is also quite high in calories and fat, so it should be enjoyed in moderation as part of a balanced diet.

HEALTH & BENEFITS
