1 egg white | |
2 cups applesauce | |
1/2 cup heavy cream | |
1/2 teaspoon cinnamon | |
1/2 teaspoon nutmeg | |
2 eggs | |
1 cup powdered sugar | |
1 cup heavy cream | |
4 teaspoons rum | |
4 apples | |
4 tablespoons cognac | |
1 egg ( separated ) | |
1/2 cup milk | |
1 tablespoon sugar | |
1 cup flour | |
1/4 teaspoon salt | |
1 1/2 teaspoons baking powder | |
1 cup powdered sugar ( for sprinkling , more if needed ) |
1. | In a bowl, mix together the separated egg white, applesauce, heavy cream, cinnamon, and nutmeg. |
2. | In another bowl, beat the eggs and powdered sugar until fluffy. Add rum and beat until combined. |
3. | Peel and core the apples and chop them into small pieces. In a pan, cook the apples with cognac until soft. Add the apple mixture to the first bowl. |
4. | Combine the flour, sugar, salt, and baking powder in a separate bowl. Gradually whisk in the egg yolks, milk, and the apple mixture from the first bowl. |
5. | Beat the remaining egg white until stiff. Fold the egg white into the batter. |
6. | Heat an æbleskiver pan on medium heat. Add a small amount of butter in each mold. Fill each mold with batter. |
7. | Cook until the bottom is browned, then using a skewer, flip the æbleskiver and cook the other side until browned. |
8. | Remove the æbleskiver from the pan and sprinkle with powdered sugar. Serve hot. |
