Ingredients

1 1/2 liters milk
160 g sugar
1 tablespoon coffee
160 g uncooked cream of wheat
1/2 cup butter
8 egg yolks
8 egg whites , beaten to soft peak stage until ready to use
300 g prunes , without pits chopped
slightly toasted banana leaves or presoaked corn husk , for wrapping
Coffee - Prune - Cream of Wheat Sweet Tamales is a twist on the traditional tamale. Instructions

1.In a large pot, heat the milk, sugar and coffee over medium heat, until sugar is dissolved and mixture is hot.
2.Gradually whisk in the uncooked cream of wheat, stirring continuously until mixture thickens.
3.Stir in the butter, egg yolks and chopped prunes, stir vigorously until well combined.
4.Gently fold in the beaten egg whites.
5.Take the slightly toasted banana leaves or presoaked corn husk and form them into cones, filling each cone with the mixture.
6.Fold the tops of the cones and tie with string.
7.Steam tamales for 25-30 minutes.
8.Optionally, serve with a dollop of whipped cream and a sprinkle of coffee grounds.
