Ingredients

2 lbs beef tenderloin ( trimmed of fat and silver skin )
1 red onion , quartered
4 garlic cloves , sliced
1/4 cup finely ground coffee beans or 1/4 cup ground coffee , finely ground
1/4 cup brown sugar
2 tablespoons chili powder
2 tablespoons paprika
1 teaspoon ground sage
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne
1 can beef broth
1 tablespoon Worcestershire sauce
1 teaspoon instant coffee crystals
1 teaspoon garlic powder
1/8 teaspoon seasoning salt or 1/8 teaspoon Mrs . Dash seasoning mix
2 tablespoons cornstarch
1/4 cup water
3 tablespoons butter , cut in large chunks

Instructions

1.Preheat oven to 425°F.
2.In a baking dish, place onion and garlic. Set aside.
3.In a small bowl, mix coffee, brown sugar, chili powder, paprika, sage, garlic powder, onion powder, cayenne, Worcestershire sauce and instant coffee.
4.Rub mixture over beef.
5.Sprinkle with salt and pepper.
6.Add beef broth to the baking dish.
7.Bake beef until the internal temperature registers between 120°F and 125°F for medium-rare, or until desired doneness is reached (approximately 20-25 minutes).
8.Transfer beef to a platter and loosely tent with foil.
9.In a small bowl, mix cornstarch and water until smooth. Add to pan drippings and whisk into the broth. Heat on medium high heat, stirring constantly, until thickened. Remove from heat and add butter, salt, and pepper. Stir until smooth.
10.Cut the beef into slices and serve with sauce poured overtop.
