Ingredients

2/3 cup sugar
1 tablespoon corn syrup
1 can condensed milk
3/4 cup half-and-half
1 cup whole milk
2 inches piece true cinnamon bark
1 tablespoon Kahlua or 1 tablespoon other coffee-flavored liqueur
2 teaspoons instant coffee granules dissolved in 1 tsp . boiling water
5 large eggs
3/4 teaspoon vanilla extract

Instructions

1.Preheat the oven to 350°F.
2.In a heavy saucepan, combine the sugar and corn syrup over low heat. Stir constantly until the sugar is dissolved.
3.Increase the heat to medium and bring to a boil. Stop stirring and cook until the syrup turns a dark amber color.
4.Quickly pour the caramel into eight 6-ounce ramekins. Tilt the ramekins to distribute the caramel evenly in the bottoms.
5.Combine the condensed milk, half-and-half, whole milk, cinnamon bark, Kahlua, and coffee in a medium saucepan.
6.Bring to a simmer over medium heat and cook for 2 minutes.
7.Remove from heat and let the cinnamon steep for 10 minutes.
8.Strain the liquid into a bowl.
9.In a medium bowl whisk together the eggs and vanilla.
10.Gradually whisk in the milk mixture.
11.Divide the mixture equally between the ramekins.
12.Put the ramekins in a baking pan and fill with hot water to reach halfway up the sides of the ramekins.
13.Bake until the centers of the flans are set, which will take about 35-40 minutes.
14.Let cool to room temperature.
15.Refrigerate for at least 3 hours or overnight.
16.Run a knife around the edges of the flan to loosen them from the ramekins. Invert onto a plate to serve.
