Ingredients

4 cod steaks
2 large white onions , sliced
2 garlic cloves , sliced
3 tablespoons extra virgin olive oil
1 dash white wine vinegar
2 tablespoons clear honey
1 sprig thyme
2 bay leaves
1 sprig rosemary
sea salt
fresh ground pepper
Cod with honey-glazed onions is a perfectly balanced combination of flavors and textures; the velvetiness of the cod, the sweetness of the onions, and the herbaceous notes of rosemary meld together into an indulgent yet healthy meal. Instructions

1.Season the cod steaks with salt and pepper, set aside.
2.In a skillet, heat extra virgin olive oil over medium heat, add sliced onions and garlic. Cook and stir until onions are golden brown and softened.
3.Add white wine vinegar, thyme, bay leaves, rosemary, honey and a dash of salt to the skillet. Stir well to combine all ingredients. Cook for 2 minutes over medium heat until the mixture slightly thickens.
4.Push onion mixture to the sides of the skillet and place the cod steaks in the center. Spoon the onion mixture over each steak.
5.Cover the skillet and cook until the cod turns opaque and flakes easily with a fork - about 10-12 minutes.
