Ingredients

1 onion , peeled and finely chopped
1 leek , washed and finely sliced
extra virgin olive oil
2 medium courgettes , halved lengthways
1 kg potato , peeled
2 anchovies
1 glass white wine
565 ml milk
565 ml stock
1 kg cod fish fillet , skinned and pinboned
salt
fresh ground black pepper
handful fresh flat-leaf parsley , roughly chopped
1 bunch spring onion , finely sliced

Cod, Potato and Spring Onion Stew is a simple and comforting dish that is perfect for mid-week dinners. The combination of soft potatoes, flaky fish and tangy spring onions make it a favorite in many households. Instructions

1.In a large saucepan, fry the onion and leek in olive oil until softened.
2.Slice the courgettes and add them into the saucepan, cooking until golden brown.
3.Dice the potatoes into bite-size pieces and add them into the vegetable mix, stir through anchovies.
4.Pour in the white wine, milk and stock, season with salt and black pepper then simmer for 15 minutes.
5.Cut the cod fillets into chunks and add them to the saucepan, then simmer for another 10 minutes.
6.Turn off the heat, sprinkle with chopped parsley, spring onion and squeeze some lemon juice over the top.
7.Serve hot with crusty bread or rice.
