Ingredients

1 1/2 lbs cod
1 cup olive oil
4 -5 large onions ( sliced )
3 tomatoes ( sliced thinly )
1/2 bunch collard greens ( chopped )
6 large white potatoes ( sliced )

Instructions

1.Preheat the oven to 375F.
2.In a large pot, bring salted water to boil and add the cod fish. Cook for 5-8 minutes until the fish is just tender.
3.Allow the fish to cool slightly, then remove the skin and bones and shred into large flakes.
4.In a large skillet, heat olive oil and add the onions. Cook on medium heat for 10 minutes until the onions are translucent and tender.
5.Add the sliced tomatoes and cook for another 5 minutes, stirring occasionally.
6.Layer the sliced potatoes, collard greens, cod fish and the tomato and onion mixture, drizzling olive oil between each layer. Season each layer with salt and pepper.
7.Cover the casserole dish with aluminum foil and bake in the preheated oven for 40 minutes.
8.Remove the foil and bake for an additional 10-15 minutes until the top is golden brown and crispy. Serve hot.
