1 cup all-purpose flour

1 egg yolk , lightly beaten

2 cups desiccated flaked coconut
1 cup sugar
2 tablespoons butter
1 cup water
1 pinch salt
2 eggs , separated
3/4 teaspoon vanilla extract
1/4 teaspoon almond extract
4 tablespoons apricot jam

Instructions

1.Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
2.In a medium bowl, combine the flour and salt.
3.Cut in the butter until the mixture looks like coarse breadcrumbs.
4.Mix in the egg yolk and enough ice water to form a dough.
5.Roll out the dough and lay it into a 9-inch tart pan.
6.Chill the crust for at least 20 minutes.
7.In a saucepan, combine the coconut, sugar, butter, water, and salt.
8.Cook over medium heat until thickened.
9.Remove from the heat and let it cool for 5 minutes.
10.Beat the egg yolks in a small bowl and mix in the vanilla and almond extract.
11.Add this mixture to the coconut mixture and stir well.
12.Beat the egg whites until stiff peaks form.
13.Fold them into the coconut mixture.
14.Pour the mixture into the prepared crust and bake for 25-30 minutes, until lightly golden brown on top.
15.Melt the apricot jam and brush it over the top of the tart. Let it cool before serving.
