1/2 cup sugar ( use vegan sugar if you want )
1 large plantain ( should be ripe )
8 -10 large banana leaves
extra water ( for soaking the rice )

Instructions

1.Rinse the rice in cold water several times until the water runs clear.
2.Soak the rice in water for at least 30 minutes.

4.Drain the soaking rice and add it to the saucepan. Stir occasionally until the rice absorbs the liquid.
5.Take the saucepan off the heat and allow the rice to cool.

7.Cut the banana leaves into 20-24 cm squares and blanch them in boiling water for 2-3 minutes or until they are pliable.
8.Place a heaping spoonful of rice on a banana leaf and flatten it slightly. Add a few slices of plantain on top of the rice and cover with another spoonful of rice.
9.Wrap the banana leaf around the rice to form a neat, compact package.
10.Steam the rice packets for 15-20 minutes or until the rice is fully cooked.
11.Serve the sticky rice in banana leaves hot or at room temperature.
