Ingredients

18 large shrimp , raw , peeled , deveined ( about 1 lb )
1/3 cup cornstarch
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
3 egg whites
2 cups flaked coconut
oil ( optional )

Instructions

4.In another dish, beat the egg whites until frothy.
5.In a third mixing bowl, place flaked coconut.
6.Dip each shrimp in cornstarch mixture, coat in egg whites, then dip in coconut, pressing lightly to adhere.
7.For baking, spread shrimp on a baking sheet lined with parchment paper and bake for 12-15 minutes or until cooked through and coconut is lightly golden brown.
8.For frying, cook shrimp for 3-4 minutes each side or until cooked through and coconut is lightly golden brown. Drain on paper towels.
