Ingredients

250 g unsalted butter
1 cup caster sugar
3 eggs ( lightly beaten )
1 teaspoon vanilla extract
1 cup semolina ( fine ground )
3/4 cup desiccated coconut
1 1/4 cups self-rising flour
3/4 cup sugar
1 cup water
1 lemon ( sliced finely )
Coconut Semolina Syrup Cake is a mouth-watering dessert that originates from the Middle East and North Africa. Instructions

1.Preheat oven to 180C (160C fan) and grease a 20cm round cake tin.
2.Cream the butter and sugar until light and fluffy.
3.Add the eggs and vanilla extract gradually, beating well after each addition.
4.Mix in the semolina, coconut and flour until well combined.
5.Transfer the mixture to the prepared tin and bake for 30-40 minutes or until a skewer comes out clean.
6.Meanwhile, prepare the syrup by combining the sugar, water and lemon slices in a saucepan and bringing to boil over medium heat.
7.Reduce heat to low and simmer for 5-10 minutes until the sugar has dissolved and the syrup has thickened.
8.Remove the lemon slices and allow the syrup to cool.
9.When the cake is cooked, remove from the oven and prick all over with a skewer.
10.Pour the cooled syrup over the cake, allowing it to soak in completely. Serve warm or at room temperature.
