Ingredients

500 g minced pork
2 shallots
2 small red chili
1 handful fresh coriander
1 bunch of fresh mint
1 small cucumber
1 cup shredded coconut
1/2 cup jasmine rice
3 tablespoons fish sauce
1 lime
1 teaspoon sugar
1 tablespoon vegetable oil
Coconut Pork Laab Salad is a popular dish that originated in Thailand. It's a fragrant, flavorful and colorful salad that's traditionally made with minced meat, fresh herbs, lime juice and fish sauce. In this recipe, we've added shredded coconut to give it a slight twist. This salad is highly customizable, depending on how spicy you like your food, you can add more or less chili. The salad can be eaten on its own or served as a side dish with jasmine rice.

Instructions

1.Cook jasmine rice in water as per package instructions. Once done set aside to cool.
2.In a pan, heat the vegetable oil and add minced pork, stir until the pork is cooked through and turns golden brown. Remove from heat and set aside.
3.In a separate pan, toast shredded coconut until it turns brown. Set aside.
4.In a small bowl, mix together fish sauce, lime juice and sugar.
5.In a large bowl, mix together cooked minced pork, sliced shallots, chopped mint and coriander, sliced cucumber, toasted shredded coconut and fish sauce mixture. Serve with cooked jasmine rice as a side dish.

This dish is packed full of protein due to the minced pork and has the added nutritional benefit of shredded coconut.

It’s perfect for those following a low-carb diet.

CONS

It’s quite spicy due to the addition of red chili.
If you don’t like spicy foods this recipe may not be for you.

It requires a lot of preparation time.
