4 -5 tablespoons apricot jam
3 extra large egg whites or 4 large egg whites
50 ml caster sugar
100 g coconut

Instructions

1.Preheat oven to 180 C
2.Melt butter in saucepan, add in sugar and stir until dissolved then add vanilla and oil
3.Sift flour, baking powder and salt into a separate bowl and gradually add in the butter mixture
4.Roll out the dough and press it into a greased baking dish, then spread the apricot jam on top
5.Whip egg whites until stiff, gradually adding in caster sugar, until the mixture is thick and glossy. Fold in coconut.
6.Spread the meringue over the jam, smoothing with the back of a spoon. Bake for 30 minutes.
