Ingredients

25 digestive biscuits
100 g glace cherries
100 g marshmallows
300 g condensed milk
50 g desiccated coconut
Coconut & Mallow Log is a classic British dessert that has been enjoyed for generations. The combination of sweet glace cherries, fluffy marshmallows, and crunchy digestive biscuits, all bound together with creamy condensed milk and shredded coconut, creates a delightful flavor and texture. This dessert is perfect for special occasions or as a sweet treat to enjoy with a cup of tea.

Instructions

1.Line a 30 x 20 cm shallow tin or similar with greased baking parchment
2.Crush the biscuits until they resemble fine breadcrumbs
3.Halve the cherries and snip the marshmallows into halves or thirds
4.Mix the biscuit crumbs, cherries, marshmallows, condensed milk and coconut together in a bowl until well combined
5.Spoon the mixture into the lined tin
6.Smooth the surface, cover with cling film and chill in the fridge for at least 2 hours
7.When set, lift the log out of the tin using the parchment, sprinkle with extra coconut and slice into pieces before serving
