Flan is a classic Latin American dessert that has been enjoyed for centuries. This version puts a tropical twist on the traditional recipe by incorporating sweetened coconut milk and spicy crystallized ginger. By using a combination of whole eggs and egg yolks, the custard is creamy and rich without being overly heavy. Plus, the sliced almonds on top add a lovely crunch and nutty flavor that complement the sweet caramel perfectly. Whether you're planning a dinner party or just looking for a special treat, this Coconut-Ginger Flan is sure to impress!

Instructions

1.Preheat the oven to 350°F.
2.In a saucepan over medium heat, combine 2 cups of sugar, sweetened coconut milk, and 1 1/2 cups of milk. Bring to a boil, stirring often.
3.Beat together the egg yolks, eggs, and vanilla extract in a bowl. Slowly pour the hot milk mixture into the egg mixture in a thin stream, whisking constantly.
4.Strain the custard through a fine mesh sieve, then skim off any foam.
5.Add the crystallized ginger to the custard and whisk until evenly distributed.
6.In a small saucepan over medium heat, cook the remaining 1 1/4 cups of sugar until it turns into golden brown caramel. Pour the caramel into eight 6-ounce ramekins and swirl to coat the bottom and sides.
7.Divide the custard among the ramekins, and place them in a large roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the ramekins.
8.Bake the flans for about 50 minutes or until set. Let cool to room temperature and then refrigerate for at least 2 hours or overnight.
9.When ready to serve, run a sharp knife around the edges of the ramekins to loosen the flans. Invert each ramekin onto a dessert plate, tapping firmly to release the flans. Top with sliced almonds and serve.

PROS

This flan is super creamy, with a subtle tropical flavor from the coconut milk and a hint of spice from the ginger.
It’s also gluten-free and low-carb compared to other desserts.

CONS

The caramel can be tricky to make, and the flan requires a bit of advanced preparation time since it needs to be refrigerated overnight.
It’s also quite high in fat due to the coconut milk and eggs.

HEALTH & BENEFITS

This dessert is surprisingly nutritious, considering its decadent taste! The coconut milk provides healthy fats that can help improve cholesterol levels and support brain function. Ginger is well-known for its anti-inflammatory and digestive benefits, while almonds are a great source of protein, fiber, and Vitamin E. However, this recipe still contains a lot of added sugar, so it’s best enjoyed in moderation as a special treat.
