1 1/2 cups basmati rice
3 cups water
2 tablespoons toasted almonds

Instructions

2.While the rice is cooking, heat the vegetable oil over medium heat in a large skillet or wok. Add the mustard seeds and cook until they start popping, about 1-2 minutes.
3.Add the onion, red bell pepper, ginger, garlic, lime zest, red pepper flakes, ground almonds, coriander, paprika, turmeric, and salt. Stir the ingredients together and cook until the onion has become soft and translucent, about 8-10 minutes.
4.Pour in the coconut milk and stir the curry together until it is well combined. Add the lime juice and shrimp to the curry and cook for 5 minutes until the shrimp is cooked through.
5.Serve the curry over the basmati rice and garnish with toasted almonds and chopped cilantro.
