Ingredients

1 cup all-purpose flour
1/4 cup all-purpose flour , for rolling out
1/4 teaspoon baking powder
1/2 cup butter
8 tablespoons sweetened coconut
1/2 cup sugar
3/4 cup icing sugar
2 tablespoons milk ( I have read that egg white instead of water gives a nicer glace , but have not tried this myself )
sweetened coconut ( optional )

Instructions

1.Sift together 1 cup all-purpose flour and baking powder in a mixing bowl.
2.In a separate mixing bowl, beat butter and sugar until light and fluffy. Add in the 8 tablespoons of sweetened coconut and mix until well combined.
3.Gradually add in the flour mixture to the butter mixture and stir until a soft dough is formed.
4.Preheat the oven to 350°F and grease an 8x8 inch baking pan with butter.
5.Roll out the dough on a floured surface to a thickness of 1/4 inch, then lightly press the remaining sweetened coconut on top of the dough.
6.Cut the dough into slices and bake it for about 12-15 minutes or until the edges turn golden brown.
7.Once baked, let it cool down on a wire rack for 5-10 minutes before slicing and serving.
