Ingredients

3/4 3/4 cup margarine or 3/4 cup shortening
1 1/2 cups granulated sugar

Instructions

1.Preheat oven to 350°F.
2.Grease and flour two 8-inch round cake pans.
3.In a large mixing bowl, cream the margarine/shortening and sugar until light and fluffy.
4.Beat in the egg yolks and egg white.
5.Sift together flour, baking powder, and salt in a separate bowl.
6.Add coconut to the flour mixture.
7.Alternating the wet and dry ingredients, add them to the sugar mixture in three parts, starting and ending with the dry ingredients.
8.Add vanilla and almond extract and mix well.
9.In a separate bowl, beat the egg whites until stiff peaks form.
10.In a small saucepan, combine sugar, corn syrup, water, cream of tartar, and salt over low heat, stirring constantly until sugar is dissolved.
11.Increase heat to medium and let the mixture boil for one minute.
12.Remove the mixture from the heat and stir in vanilla or almond extract.
13.Gradually pour the hot syrup over the beaten egg whites while beating with an electric mixer.
14.Continue to beat until stiff peaks form.
15.Place one cake layer on a cake plate and frost the top with the angel feather icing.
16.Place the second cake layer on top of the first and frost the entire cake with the angel feather icing.
17.Sprinkle the extra coconut over the top of the cake.
18.Chill the cake before serving.
