Instructions

1.Preheat oven to 350°F. Prepare a baking sheet by lining it with parchment paper.
2.In a bowl, whisk together the flour, baking powder, and salt
3.In a separate large bowl, beat the butter and brown sugar together until light and fluffy.
4.Add the eggs and vanilla to the butter mixture and mix until well combined.
5.Add the coconut, chocolate chips, and almonds to the butter mixture and mix until well incorporated.
6.Add the flour mixture to the butter mixture and mix just until combined and the dough comes together.
7.Form the dough into two logs on the prepared baking sheet, each about 2 inches wide and ¾ inch tall.
8.Bake the logs for 25-30 minutes, or until they are lightly golden brown and firm to the touch.
9.Remove the logs from the oven and let cool for about 10 minutes.
10.Use a serrated knife to cut the logs into slices about ½ inch thick.
11.Place the slices back on the baking sheet and bake for another 10-15 minutes, or until they are golden brown and crispy.
12.Allow to cool on a wire rack before serving.
