Ingredients

125 g unsalted butter , melted
165 g caster sugar
3 very ripe bananas
2 eggs
1 teaspoon vanilla extract
300 g self-raising flour , sifted
45 g desiccated coconut
125 g dark chocolate chips
icing sugar , to dust

Instructions

1.Preheat the oven to 180C/160C fan/gas 4.
2.Line a 12-hole muffin tin with paper cases.
3.Place the melted butter and caster sugar in a large bowl.
4.Mash the bananas with a fork and then add to the bowl.
5.Beat the eggs and vanilla extract together in a separate bowl and then add to the banana mixture.
6.Fold in the sifted flour and desiccated coconut, followed by the dark chocolate chips.
7.Spoon the mixture evenly into the paper cases.
8.Bake in the oven for 20-25 minutes, or until golden brown and a skewer inserted into the center comes out clean.
9.Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
10.Dust with icing sugar before serving.
