1 cup sweetened flaked coconut
2/3 cup plain yogurt
2/3 cup canola oil
1/2 cup fresh lemon juice
1 teaspoon freshly grated lemon zest

2 tablespoons baking powder
6 -8 peaches , peeled , halved , pitted ( original recipe calls for 16 apricots )
2/3 cup packed dark brown sugar
1/4 cup water
3 tablespoons sliced almonds
lightly sweetened whipped cream

Instructions

1.Preheat the oven to 180C. Grease a 30-cup Bundt cake pan.
2.In a bowl mix cream of coconut, yogurt, canola oil, lemon juice and zest, set aside.
3.In a separate large bowl, whisk the flour, sugar and baking powder until combined.
4.Slowly pour the wet ingredients over the dry ingredients, whisking just until everything is blended.
5.Bake the cake for 55 minutes or until toothpick inserted into the center of the cake comes out clean.
6.In the meantime, preheat oven to 220C and line a baking sheet with parchment paper.
7.In a bowl mix peaches, brown sugar, water and almonds and place on the baking sheet.
8.Roast in the oven for 20-30 minutes, stirring occasionally.
9.Allow cake to cool in the pan for 5 minutes before removing to a wire rack to cool completely.
10.Serve with the roasted peaches and whipped cream.
