3 cups cake flour

Instructions

1.Preheat oven to 325°F (162°C).
2.Grease and flour a 10-inch bundt pan.
3.In a medium bowl, sift flour and salt.
4.In a large bowl, beat the butter and sugar until light and fluffy.
5.Add eggs one at a time, beating well after each addition.
6.Stir in vanilla extract and coconut extract.
7.Gradually add flour mixture and 1 cup of coconut milk, alternately, beginning and ending with flour mixture. Mix until just combined.
8.Stir in flaked coconut.
9.Pour batter into prepared bundt pan.
10.Bake for 70 minutes or until a toothpick inserted in the center comes out clean.
11.Cool cake in pan on a wire rack for 10 minutes, then remove from pan and cool completely on the rack.
12.In a small bowl, whisk together powdered sugar and remaining 1/4 cup of coconut milk to make the glaze.
13.Pour glaze over cake and top with sweetened flaked coconut.
