2 cups French lentils , puy
1 yellow onion , chopped
6 cloves garlic , crushed
1 stalk celery , chopped
1 carrot , chopped
1 can chopped tomatoes
6 cups water
1/2 cup chopped fresh parsley
2 tablespoons dried thyme
2 tablespoons dried chives
salt and pepper

Instructions

1.Rinse the puy lentils under cold water and drain them.
2.In a large pot, add the chopped onions and garlic. Saute over medium heat until onions become translucent.
3.Add the chopped celery, carrots and canned tomatoes and stir for about 2 minutes.
4.Add the puy lentils to the pot and stir in the dried thyme and chives.
5.Pour 6 cups of water into the pot and bring to a boil.
6.Reduce heat and let it simmer for 35-40 minutes until lentils are tender.
7.Add salt and pepper to taste.
8.Garnish with chopped parsley and serve.
