Ingredients

5 tablespoons ground annatto seed ( Achiote )
2 teaspoons ground cumin
1 tablespoon ground black pepper
8 whole allspice
1/2 teaspoon whole cloves
3 habanero peppers , minced
1/2 cup orange juice
1/2 cup white vinegar
2 tablespoons salt
8 garlic cloves ( or 1/3 cup of garlic , peeled and minced )
1 cup lemon juice
3 tablespoons tequila
5 lbs pork shoulder , chopped ( AKA `` Pork Butt '' )

lettuce ( optional )
jalapeno pepper ( optional )
Cochinita Pibil is a traditional Mexican dish that originates from the Yucatan Peninsula. It's a slow-cooked pork dish that is marinated in a mixture of spices, citrus juices, and vinegar. The pork is then wrapped in banana leaves and cooked in an underground pit called a pib. This simplified version of the recipe uses readily available ingredients from the supermarket and can be made in an oven, making it easier to replicate at home. Instructions

1.In a blender, combine ground annatto seed, ground cumin, ground black pepper, allspice, whole cloves, minced habanero peppers, orange juice, white vinegar, salt, minced garlic, lemon juice, and tequila. Blend until a smooth paste forms.
2.In a large bowl, toss chopped pork shoulder with the paste mixture. Cover and marinate in the refrigerator for at least 2 hours, or overnight.
3.Preheat the oven to 325°F. Grease a large baking dish with non-stick cooking spray.
4.Pour the pork and marinade into the prepared baking dish. Cover with foil and bake for 4 hours.
5.Remove the foil and bake for an additional 30 minutes, or until the pork is tender and falling apart.
6.Serve hot with rice and optional toppings such as lettuce and jalapeno pepper.
