1 pork butt
2 achiote paste cubes
1 orange , juice of
1 lime , juice of
1 teaspoon white vinegar
1 pinch ground allspice
salt and pepper
4 -6 banana leaves , 10-by-6 in long ( optional )
corn tortilla
1 red onion , halved lengthwise and thinly sliced
3 -4 whole allspice
4 whole black peppercorns
1 -2 habanero pepper , seeded , deveined and thinly sliced
1 lime , juice of
1 tablespoon white vinegar

Instructions

1.Preheat oven to 325°F.
2.Cut pork into large pieces.
3.In a blender, mix achiote paste, orange juice, lime juice, vinegar, allspice, salt, and pepper until a smooth paste is formed.
4.Marinate the pork in the paste for at least 2 hours, or overnight.
5.Line a baking dish with banana leaves large enough to wrap the pork.
6.Place the marinated pork in the leaves with red onion, allspice, peppercorns, habanero pepper, lime juice, and white vinegar.
7.Cover the pork with the banana leaves and place in the oven to roast for 3-4 hours, or until the pork is fork-tender.
