Cochinita Pibil is a classic Mexican dish from the Yucatan Peninsula, where it has been a staple for generations. The name cochinita pibil means 'buried pork', and it refers to the traditional method of cooking the marinated pork in a pit in the ground. Today, the dish is more commonly made in an oven, but it still retains all of the delicious flavors of the original recipe. The marinade is made with achiote paste, a popular ingredient in Mexican and Central American cuisine that imparts a deep red color and earthy flavor to the dish. The marinade is then mixed with a variety of spices and citrus juices to give the pork a bright and zesty flavor.

Instructions

1.Preheat oven to 325 degrees F (165 degrees C).
2.Blend the achiote paste, orange juice, lemon juice, purple onion, habanero peppers, cumin, paprika, chilli powder, coriander, salt, and black pepper together in a blender until smooth.
3.Place the pork butt in a Dutch oven and pour the blended marinade over it. Toss well to coat, then cover and marinate in the fridge for at least 6 hours, or overnight.
4.Add the vinegar and sliced red onions to the Dutch oven and mix everything together well.
5.Cover the Dutch oven and bake for 3 hours, or until the meat is tender and falling apart.
6.Serve hot with tortillas, guacamole, and pickled onions on the side.
