Ingredients

1 package Simply Potatoes Traditional Mashed Potatoes
1/2 cup green onion , chopped
4 ounces goat cheese , crumbled
2 large eggs
1 large egg yolk
1 cup all-purpose flour ( more if you make your mashed potatoes creamier )
3 slices bacon , cubed
4 garlic cloves
1 package frozen spinach
1 pinch salt

Instructions

1.Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.
2.In a large bowl, combine the Simply Potatoes, green onion, goat cheese, eggs, and egg yolk. Mix well.
3.Add the flour to the bowl gradually, mixing between each addition, until you have a soft and pliable dough that can be shaped into gnocchi.
4.Once the dough is formed, roll out small portions of it into long ropes and cut into bite-sized pieces.
5.Bring a large pot of salted water to a boil and cook the gnocchi in batches until they rise to the surface. This should take about 2-3 minutes per batch.
6.In a large skillet, cook the bacon over medium-high heat until crispy. Remove from the skillet and set aside.
7.In the same skillet, add the garlic and spinach. Sauté until the spinach is wilted and the garlic is fragrant.
8.Add the cooked gnocchi to the skillet and toss to coat in the spinach and garlic. Sprinkle the crumbled bacon on top and transfer the skillet to the oven.
9.Bake for 10-15 minutes, or until the gnocchi are golden brown and crispy.
