Ingredients

4 yukon gold potatoes ( peeled and cubed )
salt & freshly ground black pepper
2 tablespoons parsley , fresh ( chopped )
1/2 cup half-and-half
4 slices country bread ( toasted golden brown )
4 slices cheddar cheese ( Irish )
1 cup bacon ( fried crisp and chopped into small pieces )
This is Clinton Kelly's Irish take on the classic French dish, Vichyssoise made of leek and potatoes. This Irish Potato and Leek Soup is a warming, hearty, and comforting soup that is perfect for a cold and windy day. Instructions

1.Heat olive oil in a soup pot over medium heat.
2.Add leeks, onion, and celery to the pot, and cook until vegetables are soft - approximately 5-7 minutes.
3.Add minced garlic and cook for an additional minute.
4.Pour in 2 cups milk, 4 cups chicken stock, and 1 bay leaf, bring to a low boil.
5.Stir in cubed potatoes with salt and pepper to taste, then reduce the heat and simmer for 25-30 minutes or until the potatoes are cooked through.
6.Stir in chopped parsley and half-and-half.
7.Preheat the oven to broil setting. Spread toasted bread with loaded bacon and top with cheddar cheese. Melt cheese on the toast in the oven.
8.Remove bay leaf from the soup and puree until smooth.
9.Ladle the soup into serving bowls and top with cheesy toast, garnish with chopped parsley. Serve hot and enjoy!
