Ingredients

1 large egg white
3 tablespoons cornstarch
3 tablespoons Chinese wine or 3 tablespoons dry sherry
3 tablespoons soy sauce
1 lb chicken breast , boneless , skinless , cut into 1-inch cubes
1/4 cup chicken stock
2 teaspoons sugar
15 dry red chili peppers
2 tablespoons olive oil
1 tablespoon minced garlic
1 tablespoon minced ginger
2 tablespoons red pepper flakes
1/2 cup sliced green onion
1/2 cup roughly chopped lightly toasted cashews
green onion , sliced on the bias , garnish
General Tso's Chicken is a popular Chinese-American dish that has become a staple in many households. Instructions

1.In a large bowl, beat the egg white. Mix in 1 tablespoon cornstarch.
2.Add in the Chinese wine or dry sherry and soy sauce. Mix well.
3.Add the chicken to the bowl and toss to coat well. Leave to marinade for at least 30 minutes.
4.In a small bowl, whisk together the chicken stock, sugar, and 2 tablespoons cornstarch. Set aside.

6.Add in the minced garlic and ginger. Stir-fry for another few seconds until fragrant.
7.Add in the red pepper flakes and stir-fry for a few more seconds.
8.Add the chicken to the wok or frying pan and stir-fry for 5-7 minutes until the chicken is cooked through.
9.Add the sliced green onion and cashews to the wok or frying pan. Stir-fry for another minute.
10.Pour the chicken stock mixture into the wok or frying pan. Stir-fry for a few more minutes until the sauce has thickened.
11.Garnish with sliced green onions and serve hot with rice.
