Ingredients

1 large onion , chopped coarsely
3 tablespoons sunflower oil
500 g courgettes , chopped finely
3 eggs
3 tablespoons plain flour
2 sprigs of fresh mint , chopped
2 sprigs fresh dill , chopped
200 g feta cheese , mashed with a fork
oil ( for frying )

Instructions

1.Place the chopped onion in a frying pan with 3 tablespoons sunflower oil and cook gently until softened. Leave to cool.
2.Squeeze out any liquid from the chopped courgettes by pressing between your hands in a sieve or colander. Put the squeezed-out courgettes in a bowl.
3.Beat 3 eggs and mix with the flour in a separate bowl. Add to the courgettes, along with the onion, fresh mint, fresh dill, and mashed feta cheese. Mix well.
4.Fry spoonfuls of the mixture in hot vegetable oil until golden brown on both sides. Drain on kitchen paper and serve hot or cold with a dip of your choice.
