3/4 tablespoon salt , divided
1 1/2 teaspoons ground black pepper , divided
1 1/2 tablespoons cooking fat
1 large onion , finely diced
1 large carrot , diced
1 stalk celery , diced
4 garlic cloves , minced
2 tablespoons tomato paste
2 bay leaves
1/4 teaspoon dried thyme leaves
3 cups chicken broth
4 medium potatoes , scrubbed and cut into 2-inch chunks
1/4 cup fresh parsley leaves , coarsely chopped

Instructions

1.In a bowl, combine the beef stew meat, arrowroot, 1/2 tablespoon of salt and 1/2 teaspoon of black pepper. Toss to coat well.
2.In a Dutch oven or large saucepan, heat the cooking fat over medium-high heat. Add the beef and cook until browned, about 5 minutes.
3.Add the onion, carrot, celery and garlic, and cook until the vegetables are tender, about 5 minutes.
4.Stir in the tomato paste, bay leaves, thyme leaves, chicken broth, remaining 1/4 tablespoon of salt and remaining 1 teaspoon of black pepper. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 1 hour.
5.Add the potatoes and simmer, uncovered, until the potatoes are tender and the meat is very tender, about 20-30 minutes.
6.Remove the bay leaves and discard. Season with additional salt and pepper, if desired. Serve hot garnished with parsley leaves.
