Instructions

1.Preheat the oven to 190°C/375°F.
2.Grease six 1-cup (250 ml) ramekins and dust with cocoa powder.

4.Melt the bittersweet chocolate and cream together in a heatproof bowl set over a saucepan of barely simmering water. Stir in the coffee powder and cognac.
5.Add the chocolate mixture to the egg yolk mixture and stir until well combined.
6.In a separate bowl using an electric mixer, beat the egg whites until stiff peaks form.
7.Gently fold the egg whites into the chocolate mixture until well combined.
8.Divide the mixture between the prepared ramekins and smooth the tops with a spatula.
9.Bake for 13-15 minutes until well risen and firm.
10.For the sauce, melt the bittersweet chocolate and butter together in a heatproof bowl set over a saucepan of barely simmering water.
11.Stir in the cream and mix until smooth.
12.Remove the souffles from the oven and serve immediately with the chocolate cream sauce.
