Ingredients

300 g ready made shortcrust pastry
200 ml fresh lemon juice
2 lemons , zest of , fresh finely grated
8 tablespoons creme fraiche
160 g caster sugar
7 eggs , beaten
icing sugar , to sprinkle
Classic French Tarte Au Citron, also known as Fresh Lemon Tart, is a popular dessert in France and around the world. Instructions

1.Preheat the oven to 220°C.
2.Roll out the pastry to line a 24cm loose-bottomed tart tin. Chill in the fridge for at least 30 minutes.
3.Line the pastry case with baking parchment and fill with baking beans. Bake in the preheated oven for 15 minutes then remove the parchment and baking beans and bake for a further 5 minutes until the pastry is golden and crisp.
4.Reduce the oven temperature to 130°C.
5.In a large bowl, whisk together the lemon juice, lemon zest, creme fraiche, caster sugar and eggs until well combined.
6.Pour the mixture into the pastry case and smooth the surface.
7.Bake for 25-30 minutes until the filling is just set and the edges are golden brown.
8.Cool before removing from the tin and dusting with icing sugar.
