Ingredients

2 entrecote steaks
100 g butter
2 shallots , finely chopped
100 ml red wine
200 ml demi-glace or 200 ml beef stock
2 tablespoons chopped parsley
salt
black pepper

Instructions

1.Preheat oven to 220 °C.
2.Season the steaks liberally with salt and pepper.
3.Melt 2-3 tablespoons of butter in a skillet over medium-high heat, and sear the steaks for 2-3 minutes per side until well-browned.
4.Transfer the steaks to a baking dish and bake in the preheated oven for 5-8 minutes for rare, 10-12 minutes for medium-rare, or 12-15 minutes for medium-well.
5.In the same skillet, add chopped shallots and cook until translucent, about 2-3 minutes.
6.Pour in red wine and deglaze the skillet until the liquid is reduced by half.
7.Add demi-glace or beef stock, whisking constantly until the sauce is smooth and slightly thickened.
8.Whisk in the remaining butter and chopped parsley, then pour the sauce over the steaks in the baking dish and serve hot.
