Ingredients

20 lbs clams ( small )
2 ounces fat bacon
1 large onion
1/4 cup olive oil
1 tablespoon butter
2 1/2 quarts water
1 1/2 cups uncooked rice
peas

Instructions

1.In a large bowl, wash the clams thoroughly with cold water and set them aside.

6.Once the clams are cooked, remove them from the saucepan and set them aside.
7.Pour the remaining soup mixture into a large pot, then add the cooked rice and peas.
8.Place the soup over medium heat and let it simmer for an additional 10 minutes.
9.Serve the soup hot in bowls and garnish with the crispy bacon pieces.
