1 tablespoon sake , plus
1/2 teaspoon sake
1 tablespoon white miso
2 teaspoons sugar
1/2 teaspoon light soy sauce
4 ounces fresh very small clams , shucked ( shucked weight )
3 cups water , divided
6 green onions
1/4 teaspoon salt

Instructions

4.Add the clams to the pot, cover, and simmer for 2 minutes or until the clams have opened.
5.Drain the clams and discard any that did not open.
6.Thinly slice the green onions.
7.Divide the clams among 4 plates, top with sliced green onions and drizzle the miso dressing.
