Ingredients

1 teaspoon dark sesame oil
4 cups small broccoli florets or 2 cups asparagus tips and 1 cup sliced red bell pepper and 1 cup pea pods

2 tablespoons cornstarch
1 tablespoon red chili paste
8 ounces can sliced water chestnuts , drained
3 cups hot cooked rice
1 1/2 tablespoons green onion tops , thinly sliced

Instructions

1.Heat the dark sesame oil in a large nonstick skillet over medium-high heat.
2.Add broccoli or asparagus, red bell pepper and pea pods
3.Stir constantly for 2-3 minutes until vegetables are tender-crisp.
4.Add more oil if necessary, then add the shrimp and garlic to the pan and cook for 4-5 minutes or until shrimp are cooked through.
5.Add in shiitake mushrooms if using and cook for an additional 1 minute.
6.In a separate bowl, whisk together sugar, rice vinegar, ketchup, cornstarch and red chili paste to create the sauce.
7.Add sauce to the pan and bring to a boil at medium heat.
8.Stir in water chestnuts and cook for another minute or so.
9.Serve with hot cooked rice, and sprinkle with green onion tops.
