City Ceviche is a popular seafood dish that originated in Peru, but has since become a staple in many other Latin American countries, including Mexico. The dish is made by marinating raw seafood in citrus juice, which cooks the seafood and infuses it with flavor. While there are many variations of City Ceviche, it typically consists of seafood, vegetables, and herbs. This version includes sea scallops, shrimp, red and yellow bell peppers, tomato, red onion, cilantro, and serrano chile pepper. The dish is served cold and can be enjoyed as a light lunch or dinner.

Instructions

1.In a large bowl, combine the sea scallops, shrimp, lime juice, orange juice, and orange zest. Make sure the seafood is fully submerged in the liquid. Refrigerate for at least one hour, stirring occasionally.
2.Once the seafood is opaque and cooked through, drain the liquid and discard.
3.In a separate bowl, mix together the red onion, red and yellow bell peppers, tomato, serrano chile pepper, cilantro, salt, cumin, and cayenne pepper.
4.Add the cooked seafood to the vegetable mixture and stir gently to combine.
5.Drizzle olive oil over the top and garnish with diced avocado before serving.
