1 package queso fresco , crumbled
1/2 cup Cotija cheese , crumbled
1/2 cup diced jicama
1 small diced cucumber
1/2 cup chopped fresh cilantro
1/2 cup diced red onion
2 medium tomatoes , chopped
1/2 chipotle chile in adobo , finely chopped
1 lime , juice of
1 tablespoon olive oil
Citrus Queso Salad (Dip for Chips) is a bright, colorful, and flavorful salad perfect for parties, picnics, and game day. This Mexican-inspired salad is made with fresh vegetables and two types of crumbled cheese, queso fresco and Cotija cheese, and is spiced up with finely chopped chipotle chile in adobo. Jicama, which is a crunchy and slightly sweet root vegetable, adds a refreshing texture to the salad. This salad can be served as a dip for tortilla chips or as a side dish to your favorite Mexican entree.

Instructions

1.In a large mixing bowl, combine crumbled queso fresco and Cotija cheese, diced jicama, diced cucumber, chopped cilantro, diced red onion and chopped tomatoes.
2.Add finely chopped chipotle chile in adobo and squeeze lime juice over salad.
3.Drizzle olive oil over everything and toss to combine.
4.Refrigerate the salad for 1 hour before serving.
5.Serve chilled as a dip with tortilla chips.

PROS

This salad is very easy and quick to prepare.

Chipotle chile in adobo has high sodium content and may not be suitable for people with hypertension.
