Ingredients

4 medium kumara ( about 1kg )
50 g butter
1 lemon rind
1 orange rind
1/4 cup brown sugar
1/2 teaspoon nutmeg
1/2 cup orange juice
Citrus-Baked Kumara is a simple and elegant dish that is easy to cook while delivering a delicious taste. Instructions

1.Preheat oven to 190°C.
2.Pierce the kumaras with a knife and place them in a roasting dish.
3.Melt the butter in a pan and add lemon rind, orange rind, brown sugar, nutmeg and orange juice. Heat and stir until sugar has dissolved.
4.Pour the mixture over the kumaras and cover the roasting dish with a lid or tinfoil.
5.Bake for approximately 50-60 minutes or until kumaras are tender.
6.Remove the lid (or tinfoil) and cook for a further 10-15 minutes.

PROS

The citrus flavour from the lemon and orange rind gives a fresh tang to the roasted sweet kumaras.
The addition of nutmeg and brown sugar gives a fragrance and natural sweetness for extra flavour.

CONS

Baked kumaras may produce a lot of juices which could make them a bit too soggy and the skin might wrinkly.
The sugar content could be a bit high for some diets.
