Ingredients

1 1/2 cups almonds
1/2 cup butter
1 cup sugar
2 tablespoons sugar
3 eggs , separated
1 1/2 teaspoons vanilla extract
1 orange , zest of , finely chopped
2 cups all-purpose flour or 2 cups unbleached flour
2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups coarsely chopped milk chocolate ( I use Ghiradelli ) or 1 1/4 cups chocolate chips ( I use Ghiradelli )

Instructions

1.Preheat the oven to 325°F (160°C)
2.In a large bowl, cream together the butter and sugar until light and fluffy. Add in the egg yolks one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.
3.In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
4.Fold in the chopped almonds and milk chocolate chips.
5.In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
6.Divide the dough in half and shape each half into a log, roughly 12 inches long and 1 1/2 inches wide. Place the logs on a baking sheet lined with parchment paper.
7.Bake for 25-30 minutes, or until the logs are firm and lightly golden on top. Remove from the oven and let cool for 10 minutes.
8.Use a sharp knife to slice the logs into 1/2-inch-thick slices. Place the slices back on the baking sheet and bake for another 10-12 minutes, or until lightly browned and crisp. Remove from the oven and let cool on a wire rack.
