Ingredients

1/2 cup butter or 1/2 cup margarine , softened
1/2 cup brown sugar , firmly packed
1/2 cup white sugar
1 tablespoon instant espresso or 1 tablespoon instant coffee granules
2 large eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup chopped pecans
1/2 cup miniature semisweet chocolate chips
1/2 cup cinnamon baking chips ( If cinnamon chips are unavailable in your area , use an additional 1/2 cup miniature chocolate morsel )

Instructions

1.Preheat the oven to 170 degrees C (350 degrees F), line a large baking sheet with parchment paper.
2.In a large bowl, cream the butter and sugar until strongly combined and creamy.
3.Dissolve the instant espresso in 2 tablespoons of hot water and add it to the butter mixture, then stir in the eggs and vanilla extract, mixing well.
4.In a separate bowl, whisk together flour, baking powder, salt and cinnamon.
5.Add the flour mixture to the butter mixture, gradually stirring until just combined.
6.Fold in pecans, chocolate chips and cinnamon baking chips.
7.Divide dough in half and shape each half into a 9 inch log.
8.Bake in preheated oven for 20-25 minutes or until golden.
9.Leave the logs to cool for 5-10 minutes, then slice them into 1/2 inch thick biscuits.
10.Place the biscuits onto the baking sheet, cut sides down, and bake in the oven for another 15-20 minutes until crisp and golden.
